Neapolitan Pizza Dough
Makes 4 dough balls at 250g each (1000g total)
Ingredients (Baker's %)
- Flour 599g (100%)
- Water 389g (65%)
- Salt 12g (2%)
- Instant Yeast 1.8g (0.3%)
Water temperature: 55-60°F / 13-16°C (cold)
Recommended flour: 00 Flour (Caputo Pizzeria) (11-12.5% protein)
Instructions
- 1 Combine flour and water in a large bowl. Mix until no dry flour remains. Cover and rest 20-30 minutes (autolyse).
- 2 Add salt and yeast. Knead for 8-10 minutes until smooth and elastic. The dough should pass the windowpane test.
- 3 Bulk ferment 1-2 hours at room temp, then cold ferment 24-72 hours. Remove from fridge 2 hours before balling. Proof balls 2-4 hours before stretching.
- 4 Stretch and bake at 450-500°C (850-900°F) for 60-90 seconds.
Poolish (Night Before)
Start 12-16 hours before making pizza
- Flour 150g
- Water 150g
- Instant Yeast 0.2g
Mix ingredients until combined. Cover loosely and ferment at room temperature (68-72°F) for 12-16 hours. It's ready when bubbly and slightly domed.
Final Dough (Next Day)
Makes 4 dough balls at 250g each (1000g total)
- Poolish (from above) All of it
- Flour (remaining) 449g
- Water (remaining) 239g
- Salt 12g
- Instant Yeast (remaining) 0g
- Olive Oil 0g
- Sugar 0g
Add pre-ferment to remaining ingredients. Knead 8-10 min until smooth. Bulk ferment 2-3 hours at room temp. Divide, ball, and proof 2-4 hours before stretching.
